      Cook your rice with 20% less water, for Jasmin Rice thats 0.8 to 1 ration water to rice if you use a rice cooker - we want the rice on the dryer and harder side. Let the cooked rice cool spread out on a baking sheet in the fridge. Alternative use yesterday's rice.

      Prepare your ingredients: Whisk your Eggs and add a pinch of Salt. Chop Spring Onions, dice Carrots and set aside with the Peas, finely mince Garlic, pour Soy Sauce in a small bowl. You want to prepare all ingredients for quick access because timing is important for this recipe.

      Heat your Wok or large deep pan to high heat. Heat up the Neutral Oil and add Eggs when the Oil is really hot. Scramble for 1-2 minutes. Add Spring Onions, Carrots and Peas next to the Egg. Stir fry for 1 minute and add the garlic while stiring for another 30 seconds. If your pan is too small, take out the scrambled Eggs first and add after stir-frying the other ingredients.

      Add your Rice and mix well together. Stir-fry for 2 minutes, constantly turning the mix up and down.

      Push your rice to the inside of the pan and add your Soy sauce in a circle around so it touches the hot pan before the rice. This will caramelize the soy sauce and give you a more complex flavor.

      Optionally add 1-2 Tbsp of sesame oil to the fried rice and stir fry for another minute and serve while hot.
