Instructions

Step 1
Cut the mushrooms into 2-3cm thick slices and then cut them from both sides as shown in the picture.

Step 2
Roughly chop the onion. Core the bell pepper and cut into bite-sized pieces. Thinly slice the green onion.

Step 3
Sauté the mushrooms over medium-high heat until golden brown. Then remove from the pan and place on a plate or in a bowl.

Step 4
In the same pan, sauté the onion until it softens. Then add the sliced bell bell pepper and continue to sauté with the onion for a few minutes.

Step 5
Return the mushrooms to the pan and turn the heat down to low. Stir the sauce in the pan: 3 Tbsp soy sauce, 3 Tbsp vegan oyster sauce (mushroom soy sauce), 1.5 Tbsp cooking wine, 2 tsp sesame oil, 1 Tbsp corn starch and 6 Tbsp water.

Step 6
Toast cashews in a separate pan. Garnish the stir-fry with the toasted cashews, spring onions and sesame seeds, if desired.
Best served with rice.
