      Kkaennip Janhajji banchan is a traditional Korean side dish made by pickling perilla leaves. These crispy, tangy, minty leaves are a staple in Korean cuisine, often used as a wrap for meat or as a garnish. Pickling gives the leaves a tangy and slightly spicy taste, perfect to balance out rich and savory dishes. It's a great source of vitamins A and C, as well as omega-3 fatty acids and it's vegan and gluten-free.

        Rinse the perilla leaves in cold running water and drain/air dry them.

        While waiting for the perilla leaves to dry, prepare the seasoning sauce by mixing all ingreadients together in a bowl and giving it a proper whisk.

        Place the perilla leaves in stacks in a large glass container (with a lid). Spread (about 1 Tbsp worth of) seasoning sauce on top of the leaves. Repeat this process for every 3 leaves until all of them are in the container.

        Close the lid and move the container to the fridge. You can start eating the Perilla leaves from the next day onwards.
