Instructions

Step 1
Marinade: Cut chicken breast into pieces and mix well with 100ml coconut milk, curry powder, curry paste, 1 tsp salt and 1 tsp sugar in a bowl. Leave for at least 20 minutes (in the fridge), overnight if possible.

Step 2
Peanut Sauce 1: Finely dice or chop the onion and garlic. Sauté the diced onion and garlic clove with the spices in a little oil, add the grated ginger and a pinch of sugar.

Step 3
Peanut Sauce 2: Add the peanut butter, soy sauce, 200ml coconut milk and 1 tablespoon lemon juice and bring to a boil. Add enough broth (50-100ml) to make a thick sauce of the desired consistency.

Step 4
Skewer the marinated chicken pieces and sear in a skillet over medium heat for 3 minutes on each side until golden brown. Serve and enjoy! Serve with lime and coriander, depending on preference.
