        Cut carrot, bell pepper and cucumber into fine sticks. Be careful - if the sticks are too big, you will have problems folding the rice paper later. Cut the green part of the spring onion into 4cm wide pieces. Chop Mint and Thai basil or cut into strips, as per your preference.

        Sauce: finely chop tomato and sauté in oil until it starts to break down. Reduce heat and add red curry paste. When curry paste starts to become fragrant, add coconut milk, finely chopped ginger, ground peanuts (1.5-2 tbsp - depending on how intense you want the peanut flavor) and soy sauce and season with sugar and lime juice.

        Bring to a boil, stirring constantly, until sauce is thick and glossy. If sauce is too thin, thicken with a little cornstarch.

        Place rice paper wafers one at a time on a large plate or bowl of lukewarm water for 30-60 seconds. Shake gently to remove excess water. Set aside on a plate or cutting board.

        Sprinkle sesame seeds on the bottom half of rice paper first and then top with vegetables, adding a little mayonnaise or Sriracha mayonnaise for a more intense flavor if desired. Fold the roll up like a wrap - fold over the bottom, fold in the sides and then roll up tightly. Enjoy with the peanut dip. Chef Tip: You can also pan fry the summer rolls. Wait until the rice paper is dry on the outside. And it's best to use two layers of rice paper so it doesn't tear!
