      Kimbap is the Korean version of sushi. Very similar on the outside, one of the main differences between the rice rolls is how the rice is cooked. In Japanese sushi, white rice is seasoned with vinegar, while in kimbap it is seasoned with sesame oil (occasionally kimbap is made with brown or black rice). The two rice rolls also differ in filling - sushi is typically prepared with "cold cuts" ranging from salmon and shrimp to cucumber and carrot, kimbap rolls have savory fillings (tuna, grilled bulgogi beef or ham & cheese) similar to Korean bibimbap. Sushi is traditionally served with soy sauce and wasabi, kimbap with kimchi.

      Cook the rice - for this, the rice cooker is very convenient. Alternatively, place the rice in a pot and add one-to-one cold water (e.g. 2 cups of rice, 2 cups of water). Bring to medium-high heat and bring to boil with the lid on. Then reduce the heat to medium-low and cook for about 20 minutes.

      When the rice is done, stir with a spatula to help it steam off. At the same time, add the sesame oil and 1/2 tsp of salt and mix in carefully. To prepare the rolls, the rice needs to cool down. If you can, spread it on a large surface for 10 mins. Alternative, leave it in the rice cooker/pot for approx. 60min. The rice is ready when all steam is gone.

      Preparing the cucumber: half the cucumber into thirds and then into long strips. Place on a plate and season with 1/2 Tbsp of salt. After doing the other preparations, squeeze the cucumber strips to remove excess water.

      Preparing the egg: Whisk the eggs in a bowl. Add a pinch of salt and 1 tsp of Mirin. Fry the eggs in a pan over low-medium heat on both sides into an omelette. Remove it from the pan and let it cool down. After doing the other prepartions, fold the omelette like a Kimbap role and cut it into thin slices.

      Preparing the carrots: half and then cut into long strips. Cook over medium heat for 2-3 minutes.

      Preparing the fish cake: cut into stripes and fry over medium heat for 2-3 minutes. Season with 1 Tbsp soy sauce and 1 tsp of sugar in the meantime.

      Prepering the tuna: put all 3 cans into a bowl. Add the mayonnaise and mix well.

      Assemble all ingredients for the filling together in a "rolling station".

      Fold the Kimbap roll like a Sushi roll (more details in the Sushi recipe). Kimbap rolls are often a little thicker than Sushi rolls, so don't cut off the ends of the seaweed. Put 2 Perilla leaves as a second layer on top of the rice. Then fill with everything else.
