        Prepare all ingredients: Mince Garlic, Ginger and Shallots, grind Sesame Seeds, prepare Miso Paste, Spicy Bean Paste, Sugar, Sake, Chicken Stock and White Pepper and set aside.

        Heat a medium sized pot to medium-low. After it is warm heat the Sesame Oil and add minced Garlic, Ginger and Shallot. Fry for 1.5-2 minutes, be carefull not to burn the ingredients.

        Increase the heat to medium and add Minced Pork to the pot. Cook evenly until not longer pink, ca. 2-3 minutes. Then add the the Spicy Bean Paste and Miso Paste. Stir quickly and add Ground Sesame Seed and Sugar. Mix everything well together.

        Add the Sake and stir for 20 seconds. Then add Chicken Stock and increase to medium-high heat. Bring to a simmer. After 2 minutes taste the soup and add Salt and White Pepper to taste. Reduce to medium heat and cover with a lid.

        While simmering, cook the Ramen Noodles to instructions (usually 2-4 mins in boiling water) and prepare any toppings you like. I like to chop up some Spring Onions and julienne (finely slice 3cm long) the white part, thaw Chashu Pork Belly in the microwave, cook soft boiled Eggs for 7 minutes and drop them into ice-cold water, and cut up some Sushi Seaweed to 5cm squares.

        Put the Ramen Noodles into a large bowl and top up with the soup. Add all your toppings. As a final step add a generous slice of Butter to the ramen. Miso and Butter create an incredible flavor mix. Chef Tip: Be quick with your toppings and serve immediately. Ramen tastes the best when hot. Itadakimasu!
