      Usually when I make curry, I head straight for the chickpeas, potatoes or lentils, completely forgetting one of my faves growing up: palak paneer. Salty, creamy curd cubes in a thick spinach sauce. This bright, simple dish is easily switched into a vegan alternative with tofu and actually this chickpea tofu has an even better texture.

        Blanch the spinach. When it has a strong colour, drain and throw into iced water to stop it cooking. Drain and blend with chopped green chilli and fresh ginger.

        Heat oil. Add the spices and a little salt. Cube the tofu and fry til crispy outside but still soft. Remove and set aside.

        Add butter, onions, garlic and bay leaf. You might like to add a dried red chilli here, broken in half, for added flavour depth and spice. Fry til all is soft and brown.

        4. Pour in the spinach mix. Rinse out the mixer with a little water and add that too. Throw in the tofu. Season with a pinch of salt and a tsp of sugar. Keep on the heat and stir until thickened*. Pinch salt and sugar *Tip: If the mixture is struggling to thicken, sprinkle over a little flour or starch.
